Achef Nikita Polido está atualmente à frente da cozinha do seu restaurante Celmar no Meco. Além disso dá aulas na Escola de Hotelaria da Setúbal.

Antes de se dedicar à cozinha estudou numa área completamente diferente: engenharia geológica, mas nunca exerceu.

Esteve em Barcelona vários anos a trabalhar em cozinhas como o La Barra do chef Carlos Abellan, com uma estrela Michelin e antes disso foi sous chef no restaurante Bravo 24 e na cozinha do hotel W. Quando regressou a Portugal trabalhou como food stylist no Raw Studio.

– 80 ml de leite
– 1 gema de ovo
– 100 gramas batata para fritar
– salsa
– azeitonas
– azeite
